Beef suet is the raw fat around the kidneys. It is a raw, hard fat that is the highest quality fat on the beef. It has a melting point of between 113 °F and 122 °F and congelation between 98.6 °F and 104 °F. Its high smoke point (374 deg F) makes it ideal for deep frying and pastry production. It can also be used in candle making and bird feeds.
