Pasture-raised, heritage pork leaf lard. Leaf lard is the crème de la crème of fats. It is internal fat from around the kidney of the animal, which has very little pork flavor. It’s the purest of fat. Leaf lard can be used in all types of cooking and is wonderful for sautéing or frying. Where is it most prized though is in baking, especially pastry. It is said to create the lightest and flakiest of crusts and cakes. This is the best fat choice for cooking when you want to enhance the flavor your dish without the fat adding a flavor of it’s own.
Our heritage hogs are raised on pasture with fresh green grass available to them at all times which makes their meat and fat higher omega 3 and CLA then non-pastured hogs. We do not feed our hogs any corn or soy at all, ever. This is especially important in choosing fats since that’s where it all gets stored.

Our lard is all natural; it is NOT hydrogenated, altered, bleached or deodorized. Our rare heritage hogs are born and raised on the farm and spend their entire lives on pasture. They are fed a diet of pasture grasses and roots, with supplemental hay and a small amount of soy-free, corn-free, and GMO-free grain. They also receive treats of eggs, fruits, nuts and vegetables raised here on the farm. All our meats are produced without added hormones or antibiotics. *** Please note: Rendered fats are shipped without refrigerant. They may arrive in liquid form. Simply place them in the fridge and they will return to a solid. They should be stored refrigerated once received to avoid bacteria growth which can be introduced from the use of utensils, etc. ***
