The Petite Tender when cooked properly has exceptions flavor and tenderness. It isn't a well known cut because it requires a skilled butcher to extract it. We are lucky enough to have a butcher that does so for us. Shaped like a pork tenderloin this wonderful cut is great for roasting or grilling whole and cutting into medallions to server. Dry heat methods like grilling, broiling, and roasting are the best methods of bringing out the most of this wonderful cut.

I'm having a hard time cooking Grass fed Beef... So hard to get it right & tender. These make it easy! I seasoned it with salt & pepper, seared it in a cast iron skillet then put it in a hot oven that I was roasting veggies in at 325, turned off the oven and let it sit for 15 minutes or so while I got the salad done. The meat was nice & pink and delicious!

The name for this steak is just perfect as it perfectly describes it. Don't let the name petite fool you though. The portion size was just right. The steak was only seasoned with kosher salt as this was my first order with Massa and I wanted to see if the steak could stand on its own and it absolutely did! Great flavor and very tender. Will order again as soon as I run out of this current order.
